Tempranillo and Merlot.

Cultivation

The grapes are espaliered and cultivated according to the regulations of the Balearic Council for Ecological Agriculture.

Grape harvest

In the month of August the grapes are hand-picked, followed by a rapid transport to the winery in order to prevent possible oxidation.

Processing

After the pressing the ripening takes places in stainless steal receptacles at controlled temperature and a following ripening in barrels made from french and american oak.

Serving temperature

Between 12º and 16º C.
