Cultivation

The grapes are espaliered and cultivated according to the regulations of the Balearic Council for Ecological Agriculture.

Grape harvest

In the month of August the grapes are hand-picked, followed by a rapid transport to the winery in order to prevent possible oxydation.

Processing

Lightly pressing the grapes, the ripening of the resulting must in stainless steel receptacles at controlled temperatures is stoped early.

Ripening

Afterwards the ripening is continued in barrels made from french “Alier”oak.

Serving temperature

Between 8º and 10º C.
