Cultivation

The grapes are espaliered and cultivated according to the regulations of the Balearic Council for Ecological Agriculture.

Grape harvest

In the month of August the grapes are hand-picked, followed by a rapid transport to the winery in order to prevent possible oxidation.

Processing

Lightly pressing the grapes, the resulting must ripens in stainless steel receptacles at controlled temperatures. The second ripening takes places in the bottle, strictly according to the tradition.

Serving temperature

Between 6º and 8º C.
